Char siu, China's popular barbecue, means fork-roasted. Traditionally, pork was seasoned, held over an open fire with a long fork and cooked. Today it is roasted in an oven.

In Mexico, barbacoa, often lamb or goat meat, is wrapped in leaves. It's then placed in a pot in a hole in the ground and cooked slowly. The term barbecue actually comes from the word barbacoa.
